1 lb. ground beef or turkey (season with chili powder, garlic powder and cumin to taste)
1/2 head lettuce
2 tomatoes
1/2 medium onion, chopped
Sliced avocados (optional)
Salsa
Shredded cheddar cheese (optional)
4-6 corn tortillas
1 can re-fried beans (or Jean's Special Pinto Beans mashed)

Instructions
Brown ground beef with seasonings making sure that it is well crumbled. If beef is still chunky use a pastry cutter and chop until fine,
Prepare salad by shredding lettuce, chopping tomatoes and dicing onions.
Cook tortillas in hot oil (the longer you cook them the crunchier they will get)
Fold tortillas in half after cooking one side and cook remaining side.
Place cooked tortillas on paper towels to drain.
Load tortillas by layering beans (to hold meat in place), meat, salad, cheese and avocado. Top with salsa or sliced jalapenos.

Cook tortillas flat and crunchy for chalupas!
