1/2 cup creme fraiche (like sour cream but creamier!)
1/2 cup chopped chives
Instructions
BBQ the filets first and then bring them inside and put them under tin foil.
Put 1T of olive oil in pan. Add shallots and cook over medium heat until softened, about 2 mintes. Add the mushrooms and cook, stirring occasionally, until golden (about 2 minutes).
Add the brandy and scrape sides. Add the stock and creme fraishe and simmer until slightly thickened (about 1 minute).
Add any juices from the steaks, stir in chives and add salt and pepper and pour over steaks.
