     Blackened Chicken Fettuccine

Ingredients
1 lb. chicken tenders or chicken breast to equal
Blackening seasoning (to taste)
1/2 to 2/3 package fettuccine (broken in half)
1/3 to 1/2 cup milk
2 tbl. butter or margarine
2 tbl flour
1/4 cup parmesan cheese
1/2 cup sour cream
garlic powder, salt and pepper to taste
 
1-2 tbl olive oil (to cook tenders)
Parsley (optional)

Instructions
Place fettuccine in large pot of boiling water and stir well, making sure all noodles separate.
Sprinkle blackening seasoning on chicken strips and grill or sautee them in 1-2 tbl olive oil.
Set aside cooked chicken and in same pan add 2 tbl butter or margarine. Mix flour and milk until smooth and add to pan. Stir constantly, until begins to thicken. Add parmesan cheese, garlic powder and salt and pepper to taste. At last minute add sour cream. Warm sour cream. Mixture should be thicker than gravy.
Drain noodles and pour in casserole dish. Pour sauce over noodles and top with chicken pieces. Garnish with parsley for color.
Serving Suggestions
Add spinach for Blackened Fettuccine Florentine, or broccoli for a change. Serve with a caesar salad and toasted french bread.
