     Roasted Carrots

Ingredients
12 carrots
1 1/4 tsp kosher salt
1/2 tsp fresh ground black pepper
2T minced flat leaf parsley
3T olive oil
 

Instructions
Preheat oven to 400F.
Slice carrots diagonally into 1 1/2 inch pieces (make them bigger than you think!)
Toss carrots in a bowl with olive oil, salt and pepper.
Place on a baking sheet in one layer and roast in the oven for 20 minutes. Toss with minced parsley and season to taste.
