     Artichoke Quiche

Ingredients
9 inch pastry pie shell (frozen)
12 oz jar marinated artichoke hearts (cut up)
1 small onion, finely chopped
1 garlic clove, minced
4 eggs
1/4 cup dry bread crumbs
1/4 tsp salt
1/8 tsp pepper
1/8 tsp oregano
 
1/8 tsp tobasco
2 cups grated cheddar cheese
2T finely chopped parsley

Instructions
Preheat oven to 350F. Bake pie shell for 7 minutes and remove from oven. Reduce heat to 325F.
Reserve marinade from artichokes and saute the onion and garlic in it for approximately 10 minutes on medium heat.
Beat eggs and add the bread crumbs, salt, pepper, oregano and tobasco. Stir in the cheese, parsley, artichokes and onion mixture.
Pour in partially baked pie shell and bake for 45 minutes.
