3 tbsp olive oil
|
|
2 garlic cloves minced
|
|
3 tsp chili powder
|
|
3 tsp dried oregano
|

3 cans (14 1/2 oz) diced tomatoes with juice (puree in food processor )

4 cups thawed frozen corn
|
|
Salt & pepper to taste
|
|
1 1/2 medium onions chopped
|
|
3 cans (4 oz) green chili peppers, chopped
|
|
|
|
3 tsp cumin
|
|
12 - 14 cups chicken broth
|
|
4 cups cooked & cubed chicken
|
|
2/3 cups chopped cilantro (if using dried use less)
|

SERVE WITH TORTILLA CHIPS

Instructions |
|
|
Heat oil, add onions & garlic, saute until soft. Add chili peppers, chili powder, cumin & oregano. Stir for 1 minute.

Mix broth, tomatoes & juice. Bring to a boil. Add chicken, corn and cilantro.
|
|
|
Add sauted mixture and simmer until cooked throughly, about 20 to 30 minutes. Add salt and pepper to taste. Garnish with chips if desired.
