Ingredients
3 tsp light brown sugar
1 tbls soy sauce or fish sauce
12 oz ground chicken
3/4 cup finely chopped toasted peanuts
1/2 cup breadcrumbs
1 tbsp red curry powder
1 tbsp lime juice
3 kaffir lime leaves, chredded or zest of one lime
2 tbsp sweet chili sauce
 
2 tbsp chopped cilantro
1/2 cup vegetable oil

Instructions
Dissolve 3 tsp light brown sugar in 1 tbls soy sauce or fish sauce.
add- 12 oz ground chicken 3/4 cup finely chopped toasted peanuts 1/2 cup breadcrumbs 1 tbsp red curry powder 1 tbsp lime juice 3 kaffir lime leaves, chredded or zest of one lime 2 tbsp sweet chili sauce 2 tbsp chopped cilantro
Mix well. Form the mixture into about 24 patties (about 1/2 inch thick). Cover with plastic wrap and refrigerate 30 minutes. (or freee for up to 2 months) Heat 1/2 cup vegetable oil in a frying pan. Fry for 2-3 minutes each side or until firm, golden and cooked through. Drain on paper towels. Enjoy while hot.
