     Grilled Vegtabal Salad

Ingredients
1 large potato
7 oz. squash
2 small red bell peppers
1 red onion
4 tbsps olive oil
olive oil(as required)
Dressing-
4 tsps white wine vinegar
2 2/3 tbsps olive oil
 
salt
black pepper
2 lettuce leaves
2 tsps finely chopped italian parsley
Utensils-
Kitchen scale, measuring spoons, cutting board, Kitchen knife, Grill pan, Saucepan, tongs
mini whisk, pastry brush, paper towles, and a mixing bowl

Instructions
Prep- Wash potatoes thoroughly and cut into 3/4 in. round slices. Remove seeds from squash and discard them. use spoon to scoop the seeds and pulp from the center of the squash. cut into 1 in slices. cut red peper in half legnthwise then remove and discard aeeds and stem. cut peper legnthwise to produce one peice per serving. peel red onion. cut legnthwise to produce one slice per serving.
Cooking-put salt and pepper into bowl.add wine vinager and stir. gradually add olive oil and mix well. line dish with paper towel to absorb excess water. put water, potato, and squash in the saucepan and place over heat. bring to boil. boil vegies. for 6 min. they should still be a little firm. dry in dish. sprinkle salt over the preped. veggies. use pastry brush to coat veggies with olive oil.
Cooking. place grill pan over high heat and grese it with oil using a paper towle. hold the towle with tongs. arange veggies in pan. let brown on one side and then turn to low heat and flip them over. cut the veggies into easy to eat peices. sprinkle with salt and pepper while still hot. place into bowl. add finly chopped parsley and mix. add dressing and mix well. tear leatace leaves and place veggies on top.
ready to eat
