     Mint Ice Cream Sandwiches

Ingredients
1 pint fat-free mint chip ice cream
16 2 1/2- inch chocolate wafers
1/4 cup semisweet chocolate chips, melted
 
Instructions
Scoop 1/4 cup ice cream onto each of 8 cookies. Top with remaining 8 cookies and press down gently.
Swirl top of each sandwich with chocolate. Serve immediately, or wrap and freeze until ready to serve.
Serving Suggestions
Substitute any flavor of wafer for chocolate wafers and any flavor of nonfat ice cream or frozen yogurt for mint chip ice cream.
