     Easy Peanut Butter Cookies

Ingredients
1 can (14 oz) low-fat sweetenede condensed milk
1/4 cup reduced-fat peanut butter
1/4 cup fat-free egg substitute
1 tsp vanilla extract
2 1/4 cup reduced-fat biscuit mix
1/4 cup granulated sugar
 

Instructions
Using an electric mixer set at low speed, beat condensed milk, peanut butter, egg substitute and vanilla until smooth. Add biscuit mix and stir until wee blended. Cover and chill for at least 3 hours.
Preheat oven to 350 degrees F. Coat baking sheets with nonstick spray. Drop teaspoonfuls of dough 2 inches apart on baking sheets. Sprinkle cookies with sugar, and bbake until lightly browned, 6-8 mins. Remove from baking sheets. Cool on wire racks. Store tightly covered.
