Sweet Potato Souffle

Ingredients
-
3 pounds of sweet potatoes boiled in the skin
-
1 cup white sugar
-
1/2 tsp salt
-
2 eggs
-
1/3 stick margarine
-
1/2 can milk
-
1 tsp vanilla
-
TOPPING-
-
1 cup light brown sugar
 
-
1/3 cup flour
-
1 cup chopped pecans
-
1 cup coconut
-
1/3 stick margarine

Instructions
Preheat oven to 350 degrees.
In a large bowl, combine peeled cooked potatoes, white sugar, salt, eggs, margarine milk and vanilla.
Whip with a hand mixer until mixture is fluffy. Spread into a baking dish.
Prepare the topping- Combine the brown sugar, flour, nuts coconut and margarine in a medium mixing bowl. Sprinkle over the sweet potato mixture. Place in the preheated oven and bake for 50 - 60 minutes at 350 degrees. Be careful that the crust does not burn.
