     Skillet Corn Bread

1 Tablespoon shortening
1 8 ounce can cream style corn
1 cup self rising cornmeal
1 cup sour cream
1/2 cup corn oil
2 eggs

Heat shortening in heavy cast iron skillet in 425 degree oven until hot.
Combine corn, cornmeal, sour cream, oil and eggs in bowl; mix well.
Spoon batter into hot skillet and bake for 20 minutes. Cut into squares to serve.
May add chopped jalapeno peppers or okra to batter before baking if desired. May double recipe and bake in 9x13 inch baking pan.
