     LEEK AND POTATOE SOUP

Ingredients
2 leeks – keep some for garnish if liked
750g potatoes
1 large onion
500ml water
1 chicken stock cube
25g butter
Black pepper
 

Instructions
1. Peel and chop potatoes in 1cm dice 2. Clean and slice leeks finely
3. Peel and chop onion 4. Mix stock cube and boiling water
5. Heat butter and fry onion potato and leek until softened slightly 6. Add stock and seasoning and simmer 20 minutes until vegetables cooked
7. Blend until smooth
