     Layer Mexican Chicken

Ingredients
2 lbs uncooked ckicken breast, skinless, boneless
30 oz black beans, rinsed and drained
3 c fat free sour cream
2 cups shredded Mexican cheese, reduced fat
8 oz chopped green chilies
1 cup salsa
1 tsp cumin
1/2 tsp pepper
12 medium corn tortillas, cut into 2 inch strips
 

Instructions
Preheat oven 350 degrees. Spray baking dish with cooking spray. Place chicken in medium saucepan and fill with enough water to just cover chicken. Set pan over high heat and bring to boil. reduce to medium hea and simmer until chicken is cooked through. About 10-15 minutes. When chicken is cooled cut into 1 inch pieces.
transfer chicken o large bowl and add beans, sour cream, 1 cup of cheese, chilies, cumin & pepper. mix well and se aside.
Arrange 1/2 of tortillas in 9X13 baking dish overlaping pieces to cover the surface. Top with 1/2 of chicken mixture and topwith another layer of tortillas. Sprinkle wih remaining cheese.
Bake until bubbly and cheese is melted. About 30 minutes. Let stand for 5 minues before slicing. Serve wih Salsa.
