Beat butter or margarine until soft. Add sugar and lemon peel and combine. Add eggs one by one and mix for approx. 30 seconds per egg with an electric mixer.

Mix flour, cornflour and baking powder together, sieve and then add to the mixture in two parts.

|
Bake at 180 degrees C. for approx 25 min. on a greased baking tray.

|
For lemon icing-
Mix icing sugar with lemon juice until thick. Add to the top of the cake whilst still hot (the hotter the cake, the more the icing will sink in). Let the cake cool.
