     Shrimp n' Greens

Ingredients
2-3 leaves fresh basil
2-3 Tbsp olive oil
10-15 medium stalks asparagus
Roasted red peppers or sun-dried tomatoes
12 oz. shrimp
2-4 cups fresh spinach
2-4 Tbsp soy sauce
 

Instructions
Heat oil in wok or large pan. When hot, add basil until it becomes brittle.
Add asparagus, shrimp, and roasted red peppers to the oil. Saute for 1-2 minutes.
Add spinach on top and leave sit. This will hold in the steam and finish cooking the other ingredients. After a few minutes, turn the spinach so the leaves wilt.
Add the splash of soy sauce, remove from heat, serve right away.
Serving Suggestions
Can serve over rice if you aren't watching carbs!
