|

l onion, finely chopped

1 carrot, finely chopped

1 stalk celery, finely chopped

1 T garlic seasoning blend
|

32 oz chicken broth
|

6 potatoes, cubed
|

1 T chives (dried, if using fresh, add at the end)

|
8 oz velveeta
|
|

1 cup sour cream
|
|
salt and pepper to taste
|
|
bacon and/or parsley for garnish
|

Instructions |
|
|
saute onion, carrot,celery, and garlic seasoning in butter until soft.
|
|
|
add chicken stock and chives. bring to a boil. add potatoes and cook until tender.
|
|
|
add velveeta and let it melt. stir in sour cream.
add salt and lots of pepper to taste.
|
|
|
top with bacon and/or parsley.
