     Potato salad with pancetta and basil

500gm jersey benne potatoes
100gm pancetta
3 tbsp creme fraiche
2 tsp horseradish cream
zest and juice of one lemon
2 tbsp capers
1/1 cup basil leaves
Salt and pepper

Gently wash the potatoes and boil until tender. Drain and let cool.
Tear the pancetta in pieces and fry in a hot pan until crispy.
Mix together the creme fraiche, horseradish cream, zest and juice, capers, basil, and salt and pepper.
Combine the potatoes, pancetta, dressing and serve with extra basil to garnish.
