Ingredients
1 cup bulgar wheat, dry
1 1/5 cup boiling water
1/4 cup lemon juice
1/4 cup olive oil
2 garlic cloves, minced
salt
pepper
4 scallions, minced
1 Tbsp. parsley
 
8 fresh mint leaves
1 large tomato, diced
1 cucumber, diced

Instructions
Place bulgar in heat-safe bowl. Pour boiling water on top and cover tightly. Let stand until tender; at least 20 minutes. Drain any excess water.
Stir in remaining ingredients. Cover and place in refrigerator for at least 1 hour before serving. Serve chilled and enjoy!
