     Vegetarian Chili

Ingredients
1 small onion, chopped
3 garlic cloves, minced
3/4 cup carrots, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
3/4 cup celery, chopped
1 can kidney beans, rinsed
1/2 cup corn
8 oz. tomato sauce
 
dash of cayenne
chili powder, to taste
ground cumin, to taste
oregano, to taste
salt and pepper, to taste
3 cups low-sodium chicken broth
Mexican-blend cheese

Instructions
Mix all ingredients, except cheese, in slow-cooker. Set on low and cook for 4-6 hours.
Set on high a few minutes before serving. Serve into bowl, top with cheese and enjoy!
