Heat olive oil or cooking spray in large skillet over medium heat. Add onion and garlic and cook about 5 minutes. Add carrots, pepper, 1 cup chicken stock and soy sauce; mix well.
Bring mixture to a boil, reduce heat, cover and simmer for about 5 minutes or until vegetables are tender. Add in shrimp.
Add noodles into mixture; if necessary, slowly add remaining stock to cook noodles. Cover and cook over low heat about 7-10 minutes until noodles are tender and liquid is absorbed.
Sever and enjoy!
