     Vegetarian Chili with Cornbread Topping

Ingredients
onion, diced
red bell pepper, diced
green bell pepper, diced
garlic, minced
olive oil
Morning Star Meal Starter Crumbles
can of corn, drained
4 oz. can green chiles
2 cans diced tomatoes
 
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
cayenne pepper, to taste
chili powder, to taste
red pepper, to taste
cumin, to taste
chipotle chili powder, to taste
salt and pepper, to taste
1 box cornbread mix

Instructions
Sautee bell peppers and onion in olive oil and garlic. Add all other ingredients. Bring to a boil and allow to simmer for 30 minutes.
While chili is simmering, prepare a commercial form of cornbread.
Layer half the batch of chili in a 9 x 13. Top with cornbread mix, trying to cover the surface.
Bake at 350 for 30 minutes, or until a toothpick comes out of the cornbread portion cleanly.
