     New Year's Black-Eyed Pea Soup

Ingredients
1 lb. blackeyed peas
6 c. water
1 lg. ham hock and/or ham or bacon
1 lb. pork sausage
1 onion, finely chopped
1 green pepper, finely chopped
6 oz. can chopped green chiles
1/2 t. pepper
1 t. cumin
 
1/2 t. salt
28 oz. diced tomatoes

Instructions
Soak blackeyed peas and soak for 8 hours. Pour off liquid.
Add ham hock and leftover ham or bacon and simmer for 2 1/2 hours.
Saute sausage, onion and bell peppers until cooked completely. Add green chiles, pepper, salt, and tomatoes.
Remove meat from ham hock. Add to blackeyed peas with sausage mixture. Simmer for 1 hour.
