     spanish flan with homemade caramelized sugar

Ingredients
1 cup white sugar
4 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 Tablespoon vanilla extract
 

Instructions
Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
In a large bowl or blender (much easier), beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. (this is an extra step my family does.... get a seperate baking dish that is almost 2x as big as the one you have prepared the mixture on and place the mixture dish inside that one. fill the outside (bisher baking dish) with water.. do not fill to the top. (this helps the flan not to get burned on the bottom.
Bake in preheated oven 60 minutes. Let cool completely. To serve, carefully invert on serving plate with edges when completely cool.
You may certainly add fruits on top to make it all pretty.... choose your favorite and decorate your caramalized flan! cherries, strawberries, nuts, pineapple, grapes, kiwii, you pick
