1 box of Dark Chocolate or Fudge cake mix (I prefer Pillsbury)
1-2 Tablespoons Flour
1/4 cup vegetable oil
2 eggs
1 tsp Peppermint extract
1 cup Dark chocolate chips
Crushed peppermints (for topping)
Instructions
Pre-heat the oven to 350 degrees. Mix the cake mix, oil, eggs and extract in a mixer. Add flour to make the dough the correct consistancy. (I live over 5000 ft so I need to add about 2 Tbs).
Mix in the chocolate chips. Form balls from the dough and place on a cookie sheet. Bake for about 8-10 minutes.
Remove to a cooling rack and sprinkle with crushed peppermints while hot. Let cool and enjoy!
