     Baked Potato Soup

Ingredients
5-6 large white potatoes diced
1/4 vidalia onion diced
5 strips of bacon
1/2 stick butter
1 pkg cream cheese
1 can evaporated milk
3 cups whole milk
3-4 cut green onions for garnish
 

Instructions
(par boiling the potatoes before adding to the soup will speed the process along and avoid parching the milk)
start by frying your bacon (crisp) in bottom of your stock pot, remove and let cool after cooking..leave the bacon grease and add diced onions and butter... sautee the onions until they are just beginning to carmelize... add in milk, evaporated milk and cream cheese and bring to a soft rolling boil allowing for ceam cheese to melt into the mixture
At this point add the potatoes to the mix (already parboiled) and allow the soup to simmer for about 20 minutes... in the last 5 minutes add 2 cups cheddar shreds to the mix and let it melt in, then garnish wtih green onion and crumbled bacon.
