Crumble-
|

1 1/2 c. walnuts
|
|
1 c. almonds
|
|
1/2 vanilla bean, scraped, or 1 t. vanilla extract
|

15 pitted dates
|
|
1 T. coconut oil, melted
|
|
1/2 t. salt
|
|
Filling-
|
|
3-4 ripe peaches, sliced
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Combine the nuts, vanilla pulp, dates and salt in a processor. Add the coconut oil and process until sticky and crumbly.
|

|
Press half of the crumble into the bottom of a pie pan.
|
|
|
Add the peaches in concentric overlapping circles.
|
|
|
Spread the rest of the crumble over the peaches. Place a few peach slices on top to make it look pretty. Enjoy!
