1 1/2 lbs of beef tenderloin or flank steak (I prefer flank) cut into strips
2 medium red onions cut into strips
1 (15 oz) can of diced tomatoes, drained
salt and pepper to taste
1-2 jalapeno peppers, seeded and cut into strips (optional)
1/4 cup of fresh cilantro
1/2-1 tsp paprika
canola oil for the stir-frying
1/2 bag of frozen french fries
Instructions
-Make the crushed garlic and salt into a paste. Whisk the paste, rice vinegar, soy sauce, canola oil, cumin, and black pepper all together.
-Put the meat and onions into separate bowls and divide the marinade into each bowl and let them sit in the fridge for one hour.
-Heat some canola oil in a wok or pan on medium heat. Once it's hot, put in the steak along with all of the marinade juices and let it brown. Add the tomatoes and let simmer for a few mins (somewhere around here, or before, you will have wanted to cook your fries)
-Add the jalapeno, cilantro, and onions (with all of the marinade juices), stirring until well blended. Let simmer for 5 more mins.
-Sprinkle the cooked fries with paprika and then stir into the meat and veggies.
-Serve over hot white rice or eat as is
