Pat cookie dough into pizza pan and bake for 30 minutes at 325 degrees. Cool completely.
Combine 8 oz. cream cheese, 2 T. sugar, and 1/2 tsp. vanilla. Spread on cooled cookie crust.
Top with fruit(s) of your choosing. Use your imagination! Choose fruit (fresh or canned) that you like. Start from outer edge and work toward center. Some ideas include strawberries, kiwis, bananas, peaches, raspberries, mandarin orange segments). You can use one type of fruit or a variety.
Combine 2/3 c. sugar, 2 T. cornstarch, and 1 c. fruit juice (orange or pineapple-orange work well). Boil in saucepan for 1 minute. Cool to room temperature and drizzle over fruit. Refrigerate pizza until ready to serve.
