     Orange-Bran Bread

1 c. unprocessed wheat bran
1 c. whole wheat flour
1 tsp. baking soda
1 c. raisins
1 c. buttermilk or low-fat yogurt
1 egg
1 (6oz.) can orange juice concentrate, thawed

Combine wheat bran, flour, salt, baking soda, and raisins. In another bowl, combine buttermilk, egg, and orange juice concentrate. Stir together liquid and dry ingredients just until moistened.
Turn into loaf pan that has been lightly greased and lined with parchment or waxed paper.
Bake at 350 degrees about 1 houror until toothpick comes out clean when inserrted in center.
The bread does not rise appreciably. It will have a dense texture similar to that of fruitcake. 130 calories per serving.
