Beat ricotta cheese, sour cream, salt & egg yolks until well combined. In a seperate bowl, beat egg white until stiff, and then fold through the cheese mixture.
Combine melted butter and olive oil in a small bowl or measuring cup. Brush two sheets of fillo dough generously with the olive/butter mixture and place into a greased 13 x 9 x 2 inch baking pan.
Spread a thin layer of the cheese filling onto the brushed pastry. Repeat layers until both fillo dough and cheese are used up, ending with pastry as the top layer.
Brush top generously with butter/oil mixture and springle with a little salt. Make a few holes in the top with a fork.
Bake for 30-40 minutes at 350 degrees. Remove from oven, let stand for 10 minutes and then cut into portions, serve and enjoy.
