     Forgotten Roast

Ingredients
3-4 lb. roast
4-6 carrots, peeled and cut into large chunks
1 onion, cut in half and sliced thick
3-4 potatoes, peeled and cut into wedges
1 can cream of celery soup
1 envelope dry onion soup mix
 

Instructions
Season roast with salt and pepper. Brown roast in hot oil on all sides.
Place roast in large roasting pan or dutch oven. Arrange veggies around the roast. In small bowl, combine soup with dry soup mix. Coat the roast with the soup mixture, completely covering the meat. Do not add any liquid to the pan. Cover tightly with foil and do not unsel until done!
Bake at 275 degrees for 4 hours.
