     Chili Rellenos

Ingredients
5 can (4 oz. each) mild whole green chiles
3/4 lb. grated cheddar cheese
3/4 lb. grated Monterey Jack cheese
4 eggs, separated
1 can evaporated milk
2 T. flour
Salt & pepper to taste
15 oz. can tomato sauce
 

Instructions
Preheat oven to 350 degrees.
Split chiles and remove seeds. Cover the bottom of a greased 9x13 pan with split chiles. Sprinkle all of the cheddar cheese over the chiles. Add a second layer of chiles over the cheddar cheese. Spread all of the Jack cheese over this layer of chiles.
Beat egg yolks in large bowl. Add the evaporated milk, flour, salt, and pepper.
Beat egg whites to stiff peaks in another bowl. Gently fold into yolk mixture. Pour over chiles and cheese. Bake at 350 degrees for 45 minutes or until set and browned. Pour tomato sauce over top evenly and heat 30 minutes more at 350 degrees.
