     Caramel Corn

Ingredients
1 cup butter - 2 sticks (best if butter)
2 cups brown sugar packed - 1 box
2/3 cups white corn syrup - 1/2 bottle
1/2 tsp salt
1 tsp baking soda
7-9 cups popped corn
 

Instructions
The amount of popcorn is the tricky part. As I pop it I make sure the seeds are not included so I try to sift through it before I put it in the large roaster.
Combine sugar, butter and syrup in a kettle. Bring to a rolling boil on medium heat and boil for 5 minutes, stirring continually.
After 5 minutes, add 1 tsp. baking soda and stir. This will make it caramelize and swell to double the amount. Stir the mixture until it is completely mixed. Pour it over the popcorn and mix it well.
Bake for 1 hour at 225. Stir every 15 minutes.

I have perfected this recipe and this is a family favorite.
