     Caramel Corn

Ingredients
1/2 c. butter
2 c. brown sugar
1/2 c. corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla extract
3 bags microwaved popcorn (I used 2 batches from my air popper. That's 1 cup of kernels).
 

Instructions
Directions- -Preheat oven to 300 degrees -Pop popcorn and place popcorn in a very large bowl. (I used two bowls and it was barely enough room to stir!) -In a medium saucepan over medium heat, melt butter. -Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. -Boil without stirring 4 minutes. -Remove from heat and stir in soda and vanilla. -Pour over popcorn and stir to coat. -Place popcorn in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 45 minutes. (I had a hard time with this, so I just left it alone.) -Remove from oven, stir one more time and let cool completely before breaking into pieces.
Since I used my air popper, I tried to judge the correct amount but I think I had too much popcorn. This is why I didn't really feel it too necessary to stir the caramel corn while it was baking in the oven. It worked out well though, because A- There was more to eat all by myself share, and B- It wasn't overpoweringly sweet since the popcorn wasn't completely covered in caramel (although, I wouldn't be complaining if it was!)
