     Black Bean Salsa

Ingredients
4 cans black beans, rinsed and drained
2 cans of diced tomatoes with chiles, OR 3 tomatoes, diced
(I like to use the Rotel canned tomatoes with lime and cilantro)
¼ cup fresh lime juice (using the lime juice in the plastic lime is fine)
2-3 green onions, with tops
1 small bunch of cilantro
2-3 cloves of fresh garlic, pressed
Salt & pepper to taste
Optional- add cans of corn for more color and/or crushed red pepper for more heat
 

Instructions
Rinse and drain beans in colander. Thinly slice green onions, using white onion bottoms and green tops. Finely snip or chop cilantro. In large bowl, combine tomatoes, beans, onions and cilantro. Press garlic over the mixture; pour in lime juice and salt and pepper to taste.
Cover tightly and place in refrigerator for at least 3 hours to allow flavors to blend. Serve with tortilla chips or toasted cornbread slices. Recipe can be halved, doubled or multiplied for larger groups
