     Roasted Pumpkin w/ Shallots & Sage

Ingredients
1 med sugar pumpkin (~4 lbs), peeled, seeded, cut into 2 inch chunks
4 shallots, peeled and quartered lengthwise
3 TBSP EVOO
1/4 cup fresh sage leaves
S&P
 

Instructions
Preheat oven to 450. Divide pumpkin, shallots, and oil between two large rimmed baking sheets; season with S&P, and toss. Roast until pumpkin is tender, 30-35 min, tossing once and rotating sheets halfway through. Add sage when ~15 min baking time remains.
