Ingredients
Bone-in smoked picnic ham
1 softball sized onion
1/2 a beer
2-3 carrots
2-3 cloves garlic
1 tsp liquid smoke optional
1/2 tbs cumin
1/2 tbs paprika
1 tsp mustard
 
water
3 tbs oil

Instructions
Mince garlic, carrot, & onion. heat oil in larg pot. Add minced vegtables and all spices to pot and sautee until the edges of the onions are clear. Add beer simmer off alcohol for about 5 mins.
Add Ham and fill with enough water to cover ham put a lid on the pot and bring to boiling. Once ham has reached boiling point reduce heat and simmer for 1 hour. Flip ham, without burning yourself, in the pot and continue boiling for at least 1 more hour.
When the ham is ready put on a servng dish and cover with foil. Let the ham sit for at least 10 mins before carving.
The boilng liquid can be reserved to make soup with. Once the ham has been carved return the bone to the liquid fill the pot with water and boil rapidly for 1 hour at least. Remove bone add tomato paste and 2 cups rice bring to boil,then reduce and simmer until rice is ready. T maintain rice integrity do not reheat the entire pot for leftovers. Take out only what you need and heat. Repeated heating of rice will cause it to break apart. DO NOT USE INSTANT RICE!

Mashed potatoes, gravey and green beans or corn on the cob
