     Spinach Shrimp Fettuccine

Ingredients
1 lb. uncooked fettuccine
1 (6oz) pkg baby spinach
4 cloves garlic, minced
2 TBS olive oil
1 lb. uncooked med. Shrimp, peeled and deveined
2 med plum tomatoes, chopped
½ tsp Italian seasoning
¼ tsp salt
¼ c. shredded Parmesan cheese
 

Instructions
Cook fettuccine according to package directions.
Meanwhile, in a large skillet, saute spinach and garlic in oil for 2 minutes or until spinach begins to wilt.
Add shrimp, tomatoes, Italian seasoning and salt; saute for 2-3 minutes or until shrimp turn pink.
Drain the fettuccine and add to skillet; toss to coat.Sprinkle with Parmesan cheese.
