1 (10oz) pkg frozen chopped spinach, thawed and squeezed dry
1 (15oz) ctn. ricotta cheese
½ cup minced onion
1 egg
2 tsp minced fresh parsley
½ tsp pepper
1/4 tsp garlic powder
½ cup grated Parmesan cheese
1 ½ cup shredded mozz. divided
2 (26oz) jars spaghetti sauce
1 ½ cup water
1 (8oz) pkg manicotti shells
Instructions
Preheat oven to 350. In a large bowl, combine spinach, ricotta cheese, onion and egg. Season with parsley, pepper and garlic powder. Mix in 1 c. mozzarella and ¼ c Parmesan.
In a separate bowl, stir spaghetti sauce and water. Spread 1 c sauce in the bottom of a 9x13” pan.
Stuff uncooked manicotti shells with ricotta mixture, arrange in single layer in the dish.
Cover with remaining sauce. Sprinkle with remaining cheeses. Bake for 45-55 minutes.

Suggestions
May be frozen prior to cooking. Defrost overnight before cooking.
