     Zucchini Relish

Ingredients
10 cups ground zucchini
4 cups ground onion
2 green peppers
5 TBS pickling salt
2 ¼ cup vinegar
1 tsp nutmeg
2 tsp celery seed
1 tsp dry mustard
5 cups sugar
 
1 tsp turmeric
1 tsp corn starch
¼ tsp black pepper
Pint jars

Instructions
Cut ends off zucchini, leave skins on, scrape out seeds, put into food processor and grind. Finely dice green peppers and onion (or process like zucchini)
Mix zucchini, onion, green pepper and salt together in a bowl Place ice cubes on top of mixture, cover with a rag. Leave sit 4 hours or as long as overnight.
Drain and rinse mixture with cold water and squeeze it good to get liquid out. Set aside. Combine vinegar, nutmeg, celery seed, dry mustard, sugar, turmeric, corn starch and pepper, heat to a boil. Add zucchini mix, return to boil. Add zucchini mix and return to boil.
Can mixture in pint jars using boiling method.
