Place roast at bottom of crockpot. Sprinkle dry onion soup package over beef. Rinse off all veggies (and cut the onion in chunks) and place over roast in crockpot. Then add 2 cans of soup. Spread over all. Turn on low for 4 hours, then high 4 hours. I like to make this and refrigerate the night before, and turn it on in the morning.
