     Chunky Beef Vegetable Soup

Ingredients
3 C. vegetable juice
2 C. hot water
1 lb. stew beef, cut into 1-inch cubes
8 C. frozen mixed vegetables
2 medium potatoes, peeled and cubed
1 small onion, chopped
3 Tbsp. beef instant bouillon
1/2 tsp. black pepper
 

Instructions
Pour vegetable juice and water into slow cooker. Add beef, vegetables, bouillon and pepper, stir gently.
Cover and cook on LOW for 8-9 hours OR on HIGH for 4-5 hours, until beef is tender.
Serving Suggestions
Great with Italian bread!
