     Cajun Corn Soup

Ingredients
1 C. chopped onion
1 C. chopped green bell pepper
6 green onions, chopped
1/2 C. vegetable oil
1/2 C. flour
3 C. water
1 can (14-1/2 oz) Cajun-style stewed tomatoes
2 C. chopped peeled tomatoes
6 oz. tomato paste
 
2 pkg.(16 oz. each) frozen whole-kernel corn
3 C. cubed fully cooked ham
1-1/2 lbs. smoked sausage, cut into 1/4-inch pieces
1/8 tsp. cayenne pepper or to taste
Salt and hot sauce to taste

Instructions
In a large skillet or Dutch oven, saute the onion, green pepper and green onions in oil for 5-6 minutes or until tender. Gradually stir in flour and cook until bubbly. Stir in water, tomatoes and tomato paste. Stir in the corn, ham, sausage, cayenne pepper, salt and pepper sauce.
Bring to a boil, stirring frequently. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.
Serving Suggestions
I added a can of (rinsed) black beans to it...really good!
