     Lentil & Ham Soup

Ingredients
3 cups reduced-sodium chicken broth
3 C. water
1 onion, cut into wedges
1-1/2 C. chopped celery, about three stalks
1-1/2 C. sliced carrots, about three medium
1 C. brown lentils, rinsed and drained
6 oz. cooked ham, diced
1-1/2 tsp. dried thyme
3 C. shredded fresh spinach
 

Instructions
In a 4- to 5-quart slow cooker, combine broth, the water, onion, celery, carrot, lentils, ham, and thyme.
Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours. Stir in spinach, ladle into bowls.
