     Sue's Tomatoe Soup with Pesto

Ingredients
2T Olive Oil
1/3 c Onion
8 c Tomatoe
2t Salt and Pepper to taste
3/4 c pesto (1T per serving)
PESTO
6 garlic cloves
1t basil
 
1T parsley
1/2c parmesan
1/4c Olive Oil
1/2t salt
1 lemon (optional)
Instructions
Heat oil over medium heat and saute onions
Add tomatoes, salt and pepper and reduce heat to low and simmer for 10 minutes
Blend until smooth
Pun in bowls and swirl 1T pesto into each.
