     ROASTED RED POTATOES

Ingredients
1 lb. small red potatoes
1 tbs. olive or vegetable oil
1/2 tsp. salt
1/8 tsp. pepper
2 tbs. grated Parmesan cheese.
 

Instructions
Cut the potatoes into 1/4 in. slices; toss with oil. Place in a single layer in a greased cake pan. Sprinkle with salt, pepper and cheese. Cover tightly with foil. Bake a 350 degrees for 40 minutes or until tender.
