In a seperate bowl, mix the box of instant vanilla pudding according to the package directions. Mix the cream cheese into the bowl of pudding. Spread this mixture evenly over the pineabble layer on the cake. Spread the whipped topping evenly over the pudding/cream cheese layer of the cake. Sprinkle with coconut to make it look like a snowball.
