Drain beef...some remaining gravy is OK. Dump beef, picante sauce, taco seasoning and hot sauce in a bowl. Mix thoroughly. Meat will shred. Taste mixture and add salt and pepper if needed.

Spread one fourth of meat mixture onto a half of each tortilla. Sprinkle one fourth of cheese over meat; fold tortilla in half. Repeat for remaining three tortillas.

|
Cook two at a time in a lightly oiled skillet on medium heat. Turn over when golden and cover skillet while browning other side so that cheese melts completely.

|
|
Cut quesadillas into wedges and serve with picante sauce and sour cream.
