     Can of Cow Quesadillas

Ingredients
Four 10 inch flour tortillas
12 oz. can Hereford Roast Beef in Gravy
1 cup shredded cheddar or jack cheese
Half cup Pace Picante Sauce (plus more for dipping)
One packet Taco Seasoning
Few dashes hot sauce
Salt and Pepper
Sour Cream
Cooking oil
 

Instructions
Drain beef...some remaining gravy is OK. Dump beef, picante sauce, taco seasoning and hot sauce in a bowl. Mix thoroughly. Meat will shred. Taste mixture and add salt and pepper if needed.
Spread one fourth of meat mixture onto a half of each tortilla. Sprinkle one fourth of cheese over meat; fold tortilla in half. Repeat for remaining three tortillas.
Cook two at a time in a lightly oiled skillet on medium heat. Turn over when golden and cover skillet while browning other side so that cheese melts completely.
Cut quesadillas into wedges and serve with picante sauce and sour cream.

Makes a great lunch or after school snack.
