     Mascarpone Frosting

Ingredients
1 c. heavy cream
8 oz. mascarpone cheese, room temperature
1/2 c. confectioners' sugar, sifted
 

Instructions
With an electric mixer on medium speed, beat heavy cream in a medium bowl, until stiff peaks form (be careful not to overbeat, or cream will be grainy). In another larger bowl, beat together mascarpone cheese and confectioners' suger until smooth. Gently fold whipped cream into mascarpone mixture until completely incorporated. Use immediately.
